These delicious ice cream sandwiches are loaded with NOMO Birthday Cake and stuffed with vanilla ice cream! Plant-powered, free-from, and perfect to be shared. 💜🍨 Try them now!
Ingredients:
For the cookie Sandwiches:
- 125g unsalted vegan butter, softened
- 125g golden caster sugar
- 175g GF flour
- 25g cocoa powder
- 125ml oat milk
- 1 teaspoon baking powder
- Pinch of salt

150g NOMO Creamy Choc, chopped
For the filling:
- 8 pieces NOMO Birthday Cake bar
- 8 scoops plant-based vanilla ice cream
- 8 pieces NOMO Birthday Cake bar
To finish:
- 50g NOMO Creamy Choc, melted
- Sprinkles
Method:
- Add the flour, cocao, sugar, salt and baking powder to a mixing bowl. Work the ingredients with your fingertips until you get a crumbly mixture. Add the milk and mix until combined. Fold in the chopped NOMO Creamy Choc and mix.
- Roll the dough into 16 equal balls. Slightly flatten each ball with your hand.
- Place the cookies onto 2 large baking trays, lined with greaseproof baking paper. Make sure to leave enough space between them.
- Bake in a preheated oven to 180°C/160°C fan/gas mark 4 for 8-10 mins.
- Transfer to a wire rack and let cool down completely before assembling.
- Make the ice cream sandwiches. With the help of a spatula, spread a scoop of plant-based ice cream onto half of the cookies, placed upside down. Add 1 piece of NOMO Birthday in the in the centre for the ice cream, then cover with the remaining cookies.
- Drizzle with some melted NOMO creamy choc and decorate with sprinkles.
