Birthday Cake Ice Cream Sandwiches

These delicious ice cream sandwiches are loaded with NOMO Birthday Cake and stuffed with vanilla ice cream! Plant-powered, free-from, and perfect to be shared. 💜🍨 Try them now! 

Ingredients:

For the cookie Sandwiches:

  • 125g unsalted vegan butter, softened 
  • 125g golden caster sugar  
  • 175g GF flour  
  • 25g cocoa powder  
  • 125ml oat milk  
  • 1 teaspoon baking powder  
  • Pinch of salt  
  • 150g NOMO Creamy Choc, chopped  

For the filling:

  • 8 pieces NOMO Birthday Cake bar 
  • 8 scoops plant-based vanilla ice cream  
  • 8 pieces NOMO Birthday Cake bar 

To finish:

  • 50g NOMO Creamy Choc, melted  
  • Sprinkles

Method:

  1. Add the flour, cocao, sugar, salt and baking powder to a mixing bowl. Work the ingredients with your fingertips until you get a crumbly mixture. Add the milk and mix until combined. Fold in the chopped NOMO Creamy Choc and mix. 
  2. Roll the dough into 16 equal balls. Slightly flatten each ball with your hand.  
  3. Place the cookies onto 2 large baking trays, lined with greaseproof baking paper. Make sure to leave enough space between them.  
  4. Bake in a preheated oven to 180°C/160°C fan/gas mark 4 for 8-10 mins.  
  5. Transfer to a wire rack and let cool down completely before assembling.  
  6. Make the ice cream sandwiches. With the help of a spatula, spread a scoop of plant-based ice cream onto half of the cookies, placed upside down. Add 1 piece of NOMO Birthday in the in the centre for the ice cream, then cover with the remaining cookies.  
  7. Drizzle with some melted NOMO creamy choc and decorate with sprinkles.  
  8. Freeze for a few hours before serving.
